Before attending the Natural Gourmet Institute for Health and Culinary Arts, Elena Tedeschi, Founder & Executive Chef of Well Rooted Kitchen, worked as a verbal behavior therapist and therapeutic mentor for children and adults with special needs and mental illnesses. While it was definitely a rewarding job, she always found herself coming back to cooking. Through teaching cooking as an independent living skill she learned about nutrition, the effect of food on mood, and how to utilize cooking as a therapeutic activity.
She has extensive knowledge in alternative ingredients for clients with major food allergies including gluten, wheat, nuts, dairy, and soy. She has experience in vegan, raw, vegetarian, macrobiotic, Ayurveda, GAPS, Westin Price diets and cooks a variety of international cuisines. She welcomes partnerships with holistic health practitioners and nutritionists to help clients adhere to dietary restrictions, and facilitate healthy choices during pregnancy or medical challenges.
Elena’s greatest joy is to help clients experience truly amazing food regardless of dietary restrictions without compromising taste and flavor.
